to cut against the grain lay your piece ofmeat horizontally onto your cutting board. look at your meat on the cutting board andlook for the striations of the muscle fibers. here you can see it very clearly that themuscle fibers are running length wise on this tenderloin. you want to cut against that sowere cut perpendicular down the grain and what it does is it makes texture easier tochew and this especially important when you have a lean piece of meat. and that is howyou cut meat against the grain.
